A great first submission from the lovely KendraH.  She doesn’t say if she’s tried to make it yet….but it looks delicious.  Thanks K.

Guinness Chocolate Cake

Ingredients

  • 1 c Guinness draft beer
  • 3/4 c sour cream
  • 1 stk unsalted butter (add 2 tbsp if you'd like)
  • 2 eggs
  • 1 Tbsp pure vanilla extract
  • 3/4 c unsweetened cocoa
  • 2 c all purpose flour
  • 3 c confectioner's sugar
  • 2 1/2 tsp baking soda

Directions

1Preheat the oven to 350°F. Butter and line a 9 inch springform pan.

2 Pour the Guinness into a large wide saucepan; add the butter – in spoons or slices – and heat until the butter's melted. Whisk in the cocoa and sugar.

3 Beat the sour cream with the eggs and vanilla and then pour into the saucepan; whisk in the flour and baking soda.

4 Pour the cake batter into the greased and lined pan and bake for 45 minutes to an hour. Leave to cool completely in the pan on a cooling rack.
